We ate in @liathrestaurant the other night and I've been thinking about the meal pretty solidly non stop since. Tacos, Margarita jelly shots, drunken truffles, umami cones, salt aged lemon sherbert, snail ragu and so many other little details just bouncing around my head.

It's been 7 years since the last time I ate in Liath, and what they're doing now is so genuinely brilliant that I can't wait to get back. Deeply personal, incredibly fun cooking and service that had me smiling from ear to ear from beginning to well after the end. This is easily in the top coupla restaurants in Ireland, and extremely original.

Will be thinking about this one for a long long time.
(Also, this was my Christmas present from Rach - I'm a lucky boy)

We pulled up to Street Frites, Duke street upper(between Dawson street and grafton street) for an Amsterdam style loaded fries feast and went all in 🍟🔥 Table was stacked with truffle fries, tempura frites, Yo Mama frittes, Korean chicken frites, and Mexican taco style frites. Washed it down with 2 unreal milkshakes: the Fla-Mango (mango, chilli, sweet heat hitting all at once) and a wild combo of cherry, rhubarb, red velvet, topped with cotton candy. Serious flavours. Slow Cooker Chicken Tikka Masala made with Favourit spices, served with basmati rice and naan bread.

Using some of @favouritfoods herbs & spices!🫶
Serves: 2 Fish: Any white fish (I used hake fillets but you can use cod, haddock, etc.)
Ingredients
* 2 pieces white fish (skinless, boneless)
* 2 tbsp cornflour
* 1 large egg
* 60–80 g golden breadcrumbs
* 1 tsp Favourit fish seasoning
* 1 tsp Favourit Cajun seasoning (adjust to taste)
* ½ tsp Favourit garlic granules (or garlic powder)
* Salt & black pepper (optional)
* Oil spray
Method
2. Prepare coating stations:
* Bowl 1: Cornflour
* Bowl 2: Egg, beaten
* Bowl 3: Golden breadcrumbs mixed with:
* Fish seasoning..Cajun seasoning..Garlic granules..Optional pinch of salt & pepper
3. Coat the fish:
* Lightly coat in cornflour (shake off excess).Dip into egg. Press firmly into the seasoned breadcrumbs until fully coated.
4. Prepare for air frying:
* Lightly spray both sides of the fish with oil spray. Place in air fryer basket in a single layer.
5. Cook:
* Air fry at 200°C for 10–12 minutes…Carefully flip halfway and spray lightly again. Fish should be golden, crisp, and flaky inside..If the fillets are thick, add 1–2 extra minutes.
-Air Fryer Homemade Chips with Chip Seasoning
* 2–3 medium potatoes (Maris Piper or similar)
* 1-2 tsp Favourit Chip seasoning
* Oil spray
Method
1. Prep the chips:
* Peel or leave skins on (I left them on just gave the potatoes a wash).
* Cut into even chip shapes… I added these to the microwave for 6 minutes or you can parboil. You can just add them straight to the air fryer, but I find this way the chips are soft on the inside and really crispy on the outside.
* Spray with oil spray.
* Toss with chip seasoning until evenly coated.
3. Cook:
* Air fry at 200°C for 12-15 minutes. (Depends on size of chips cut)
* Shake halfway! I served with mushy peas and tartar sauce!😍😍
